Hello everyone,

This vegan sausage and zucchini recipe is a great dish for a busy family meal, but also for those weeknights when you just want something quick to throw together.

Zucchini is a versatile and inexpensive vegetable that can be baked, sautéed, grilled, or fried. This dish is filling, simple to put together, and has a rich texture with a touch of nuttiness from the almonds.

When you’re craving something comforting but don’t want to break the bank, this sausage and noodle dish will hit the spot! To make it even easier on yourself, buy pre-spiralized zucchini and smoked sausage. This recipe is best served with a crusty loaf of bread and a glass of white wine.

For those looking for a cheaper and healthier way to cook zucchini noodles, or any other vegetable such as carrots, there are many different options. One way is to sauté them in a pan with olive oil and garlic. This dish is quick and easy to prepare for that night’s dinner.

If you’re following a gluten-free, vegan, or paleo diet, this vegan sausage recipe is your dream recipe! Sautéed zucchini noodles with sausage and tomato take just 5 minutes to cook and are chock full of vitamins. This might just be the easiest recipe you’ll ever make. It’s not only low carb and gluten-free, but also Whole30 compliant (so if you’re doing Whole30, this is your go-to recipe). So get ready to forget about pasta for good.

We hope you enjoy it as much as we do. Please share it with your friends and family if you appreciate it. Thank you very much for stopping by!

I’m making it right now for lunch, but I’ll have to cut the recipe in half because I don’t have enough ingredients. Today is the day for the taste test!
